Slow Cooker Series: Honey Bourbon Chicken + A Giveaway

Now let's get to this week's recipe, Honey Bourbon Chicken. This meal comes from the Crockpot Chicken Freezer Meal cookbook. This book contains 15 chicken dinner recipes from the one featured today to Thai Chicken and Chicken Enchiladas. Additionally included is the nutrition information for each recipes, a grocery list for all 15 recipes and printable labels for the recipes included as well as blank ones for your own notes. I still want to try the Honey Garlic Chicken and the Parmesan Crusted Chicken. I've been on a terrible honey and cheese kick lately.
HONEY BOURBON CHICKEN from Crockpot Chicken Freezer Meals
My main note for this recipe and any slow cooker chicken recipe is be very conscious of the time it takes them to cook. I have not yet mastered chicken in the slow cooker and always tend to overcook it. Anyone who has experienced a dry chicken breast understands why that's a bad thing. So as you get more comfortable with the slow cooker, note how long it takes for chicken breasts of all sizes. Also, try to buy chicken breasts that are all the same size. This will help ensure that one chicken breast doesn't try up while the others remain juicy. Here are the ingredients for the Honey Bourbon Chicken:
- Boneless, skinless chicken breasts
- Red Pepper Flakes
- Garlic
- Honey
- Ketchup
- Soy Sauce
- Light Brown Sugar
- Apple Juice
- Bourbon (or more apple juice)
- Corn Starch
I served this with corn and roasted potatoes. The sauce the chicken cooks in was phenomenal. It was so tasty that I even dipped my potatoes in it. This is not required but I flipped my chicken a few times while it cooked to make sure all sides got some juice action. Don't forget to enter the giveaway! There are a few days left.
