Breakfast For Dinner: Bacon Cheddar Waffles

Three Words: Bacon, Cheese, Waffle. Put them together and what do you get? A mouthwatering dinner that will have you craving more. First of all, who doesn't love anything with bacon? It just makes life a little bit better. Cheese is like the cherry on top of regular food. Waffles are a quintessential American breakfast food that are so versatile there are literally hundreds of recipes between cookbooks, diners and the internet. So to continue this Breakfast for Dinner series we've got going on, Bacon Cheddar Waffles felt like a pretty amazing addition. 

The best thing about customizing waffles is that you don't have to do anything to the basic recipe. Make whatever you normally do whether it's from scratch or a box of your favorite waffle or pancake mix and add in your extra goodies. In this case, we went the savory route but sweet options like berries and chocolate are great options as well.

Bacon Cheddar Waffles
Ingredients:
2 cups Pancake/Waffle Mix
1 2/3 cup Milk
1 egg
2 tablespoons Butter, melted
1 teaspoon Garlic Powder
3/4 cup Cheddar Cheese, shredded
1/2 lb. cooked Bacon, chopped

1. Cook bacon, set on a paper towel and move aside until cooled.

2. Prepare your waffle iron. Whisk together waffle mix, milk, butter and the egg until well combined. There should only be a few clumps at most. Stir in garlic powder, cheddar cheese and bacon. Pour about 2/3 cup of mix into the waffle iron (depending on size) and use a spatula to spread evenly. Cook according to waffle iron instructions. When the waffles are done cooking, remove to a plate in the oven to  keep warm. Serve with a little extra cheese and bacon on top.
