10 Easy Baking Recipes to Pass Time
Are you finding yourself with a little extra time on your hands lately? Need a few extra snacks with all the time you’re spending at home? Baking and cooking are stress relievers for me. Well...as long as it’s not in a giant holiday or entertaining setting. I prefer one-bowl recipes. Easy options for low probability of mistake. It’s also easy to clean-up and if there’s one thing I despise about baking, it’s the cleaning.
Sometimes when it feels like everything is spiraling out of control, all we can do is focus on simple tasks. Like baking. Plus, there’s a nice reward. Warm and fresh muffins right out of the oven. Buttery scones paired with our morning coffee. A delightful casserole we can gather around the table and enjoy in the morning.
Maybe this entire situation is supposed to be a reminder to slow down and enjoy the simple things. Enjoy time with the people around us who we love most. Pro tip: toss the blueberries in a little flour before mixing them into the batter so they don’t fall to the bottom while baking.
Mini Apple Cinnamon Loaves: Similar to the Apple Cinnamon Muffins, this recipe is great for afternoon snacks. They’re filling and tasty. Don’t have mini loaf pans or holders? No problem. Put the full batch in a regular sized loaf pan and bake a little longer.
Peach Apricot Cobbler: Less dough, more fruit, but still tasty. This one has a little more peeling and slicing involved but it’s worth it. I love the combo of stone fruits. If you can’t find apricots right now, plums or nectarines would work well too. Just peach wouldn’t be so bad either!
